Gobhi Paratha Recipe
Here’s an authentic recipe for Punjabi-Style Gobhi Paratha (Cauliflower Stuffed Flatbread), a wholesome and flavorful dish that pairs beautifully with butter, pickle, and curd.
Ingredients
For the Dough:

2 cups whole wheat flour (atta)

½ teaspoon salt

1 tablespoon oil or ghee

Water (as needed for kneading)
For the Stuffing:

2 cups grated cauliflower (gobhi, tightly packed)

1 green chili (finely chopped)
-
1 tablespoon fresh coriander leaves (chopped)
-
½ teaspoon grated ginger
-
½ teaspoon carom seeds (ajwain)
-
½ teaspoon cumin seeds (jeera)
-
½ teaspoon garam masala
-
½ teaspoon red chili powder
-
½ teaspoon dry mango powder (amchur) or chaat masala

Salt to taste
For Cooking:

Ghee or butter (for frying on the tawa)
Instructions
1. Prepare the Dough

In a large mixing bowl, combine flour and salt.

Add 1 tablespoon oil/ghee and mix well.

Gradually add water and knead into a soft, pliable dough.

Cover with a damp cloth and rest for 20–30 minutes.
2. Prepare the Stuffing

Wash and grate the cauliflower finely. Squeeze out excess water if it’s too moist.

Add green chili, coriander leaves, ginger, ajwain, cumin, garam masala, red chili powder, amchur, and salt.

Mix well and set aside.
3. Stuff and Roll the Paratha

Divide the dough into medium-sized balls (like a lemon).

Roll one ball into a small disc (about 4–5 inches).

Place 2–3 tablespoons of the cauliflower mixture in the center.

Gather the edges to seal and form a pouch.

Flatten gently and roll it out into a paratha (6–7 inches), dusting with dry flour if needed.
4. Cook the Paratha

Heat a tawa over medium flame.

Place the rolled paratha on it and cook for 30–40 seconds until light spots appear.

Flip, spread ghee or butter on the cooked side, and press gently with a spatula.

Flip again, apply ghee, and cook until golden brown spots appear on both sides.
5. Serve

Serve hot with a dollop of butter, pickle, and curd for an authentic Punjabi experience.
