Pani Puri Recipe

Ingredients

For the Puris:

• 1 cup semolina (sooji/rava)
• 2 tablespoons all-purpose flour (maida)
• A pinch of baking soda
• Water (for kneading)
• Oil (for frying)

For the Spiced Water (Pani):

• 1 cup fresh coriander leaves
• ½ cup fresh mint leaves
• 2 green chilies (adjust to taste)
• 1-inch piece of ginger
• 1 teaspoon roasted cumin powder
• 1 teaspoon chaat masala
• ½ teaspoon black salt (kala namak)
• ½ teaspoon regular salt (adjust to taste)
• 2 tablespoons tamarind pulp
• 3-4 cups chilled water
• 1 tablespoon jaggery or sugar (optional, for sweetness)

For the Filling:

• 1 cup boiled and mashed potatoes
• ½ cup boiled chickpeas or moong sprouts
• 1 teaspoon chaat masala
• Salt, to taste

For Garnish:

• Finely chopped onions (optional)
• Sev (optional)
• Sweet tamarind chutney (optional)

Instructions

1. Make the Puris

1. Mix semolina, all-purpose flour, baking soda, and a little water to form a stiff dough. Cover and let it rest for 20 minutes.
2. Roll the dough thin and cut small circles using a round cutter (e.g., a small lid).
3. Heat oil in a deep pan and fry the puris until golden and crispy. Remove and let them cool completely.

Tip: Store leftover puris in an airtight container to keep them crispy.

2. Prepare the Spiced Water

1. Blend coriander, mint leaves, green chilies, ginger, tamarind pulp, and jaggery with 1 cup of water into a smooth paste.
2. Strain the paste into a large bowl and mix with 3-4 cups of chilled water.
3. Add cumin powder, chaat masala, black salt, and regular salt. Adjust seasoning to taste. Chill until ready to serve.

3. Prepare the Filling

1. Mix boiled potatoes, chickpeas, chaat masala, and salt in a bowl. Set aside.

4. Assemble and Serve

1. Crack a small hole in the center of each puri.
2. Fill with a spoonful of the potato-chickpea mixture.
3. Add a little sweet tamarind chutney (if desired).
4. Dunk the puris into the chilled spiced water and enjoy immediately!
