Gajar Halwa Recipe

Here’s a delicious and easy recipe for Gajar Halwa, a traditional Indian dessert made with carrots, milk, sugar, and ghee.

Ingredients

• 1 kg carrots (grated)
• 1 liter full-fat milk
• 4 tablespoons ghee (clarified butter)
• 1 cup sugar (adjust to taste)
• 6-8 green cardamom pods (crushed or powdered)
• ½ cup khoya/mawa (optional, for richness)
• ¼ cup chopped nuts (almonds, cashews, pistachios)
• 2 tablespoons raisins

Instructions

1. Prepare the Carrots

• Wash, peel, and grate the carrots using a fine grater. Set aside.

2. Cook the Carrots in Milk

• Heat milk in a heavy-bottomed pan or kadhai.
• Add the grated carrots and cook on medium heat, stirring occasionally, until the milk starts to reduce.
• Continue cooking until the milk is completely absorbed by the carrots (this may take 30-40 minutes).

3. Add Ghee and Cook Further

• Add ghee to the mixture and sauté the carrots for 8-10 minutes, stirring continuously, until they become glossy and aromatic.

4. Add Sugar and Flavorings

• Add sugar and mix well. The sugar will release some moisture; cook until it evaporates and the halwa thickens again.
• Stir in crushed cardamom and mix thoroughly.

5. Add Khoya and Nuts

• If using khoya, crumble it and add to the halwa. Mix well and cook for another 5-7 minutes for a richer texture.
• Add chopped nuts and raisins, reserving a few for garnish.

6. Serve

• Garnish with the reserved nuts and serve warm or chilled.
